from the documentation it says that I can't use dynamic variables in sub tasks but I'm having the same issue with static variables.

Is it something wrong that I'm doing ?

Static variables in subtasks are supported. In which field do you use them? Variables are supported in any filed of string type. Also make sure that in your subtask template a scope is set and that the scope contains the field in which you use variables.

I tried to use variables in components and summary, none work.

The $VAR was replaced in the task but in the sub-tasks I got the string "$VAR"

Unfortunately variables cannot be used in components field. It should work for summary. Can you confirm that the summary field is added to the scope which is set in the subtask?
