We have the Jira Standard plan and we need somehow to organize things as follows:
So my point is I need each group to be totally separated from the other for creating and managing groups. No need to be manually adding each user to their corresponding project from the settings.
Also, users in group A should not be able to see projects for group B and so on.

One way u can do it is create groups with users you want and add them to the project permissions for the other project likewise create a group and add the group in permission in the other project.
Or
You can add individuals in the "People" in the project settings and give them the "Project role"
you can also create roles if you are a jira admin
To divide projects into groups you have the option to create "Category" ,It can be used to divide the projects based on the categories.

Just to make things clear, I will create user groups and project groups, then assign each user group with their corresponding project group.
For instance, IT user group will have access to only IT project groups with permission to create and manage their own projects. Most importantly, IT group projects can't see Sales group projects and so on.
Is there any specific guide to be followed ?

Go to "User management", There you have option to create "Group" add the members you want in the respective group, Then go to project permission add the group you want in the project and remove any other which is not required this way the group which you give will be able to access the project
