Do you mean in the commits being made?

There are a number of ways to do this but if you want to do it on a per repo basis...

  1. Open the repo in SourceTree
  2. Goto Repository -> Repository Settings menu
  3. Goto Advanced tab
  4. Adjust the user information to suit.
