Hi Erin,  you can request your own instance to try direct from Atlassian.  

You can reach out to Atlassian Partners to assist with helping with setting up a trial instance with perhaps some demo data.  They can help with working through us case, etc.  

There are a number of partners that can help (including my organisation).

You could submit a support request to Atlassian to request their advice.
