Can someone please point me to the best admin training for understanding the ins and outs of building/editing/cloning Jira Workflows for Cloud and how they interact with Issue Types and Request Types?

Although these are not beginner courses, I would suggest going through the following:

• Streamline projects across Jira with shared configurations 
• Create workflows across Jira projects using schemes 

• Configure workflows and notifications in Jira projects

• Getting more from Jira workflows

Depending on your knowledge of Jira products, you can also start with some quick-start courses/learning paths and then move forward with the courses mentioned above.
