I'm relatively new to Trello. Our org leverages Trello for some ticketing purposes. I would like to receive an email to a board, create cards, and assign a label based on the email priority (High, Normal, Low).
Is it possible for Trello to assign a label based on the priority designated when sending an email?
If so, can someone point me in the right direction? If not, I'm open to thoughts on how others may have achieved similar results.

A possibility is to use a Trello automation for that. But first, the email would need to contain a word to identify the priority. Something like High, Medium, Low, for example. And then you will need to create 3 labels with the corresponding priority.
Then, when the card is created by email in a certain list, the automation will check if the corresponding word is present and add a label to the card.
You will need to create 3 automations, one for each priority.
Here's an idea for you:
when a card with a name or a description containing "High" is added to list "Requests", add the red "High" label to the card
