I haven't used Trello all that often, but it occurs to me that it may be a good solution to use it to keep track of my watch collection. If so, then I want to I'm off to a good start.
If I want to categorize my collection by brand name, I presume I should begin by making a board for my collection first.
Then for each brand name I should create a...list? And then in each list I have the actual watches for that brand name?
I acknowledge I could make a board for each brand name, but I think that would cause me to go in and out of boards to get to the information, correct?

Great question! The way you're approaching it -- a board for the collection, a list per brand, and a card per watch -- works great! I'd then recommend dragging a picture of each watch from your desktop onto each card to see nice visual of all your watches. Watches were made to be seen!
Another way you could organize your collection is by using the lists to represent watch type -- e.g., sports, fancy, casual, etc.
Yet another way to organize your collection is by making an aspiration watch collection board where your lists are "watches you hope to collect", "watches you have", etc.
If you're in a collecting club, you can even make a board with the club, invite them all to the board, and each of you can add photos of your watches.
