My Trello has made an update and now I want to switch back to the previous version how ist that possible

With Trello's new look, we've repositioned some features.For context, over the next few months (until the end of July), our product team is transitioning the new Trello from 'Beta' to 'Generally available'. More details are available in the community post announcement.

Some users, depending on their cohort, may see a temporary option to exit the new version, but all users will be on the new experience by the end of July.

The recent updates are part of our long-term vision for the product, but I’m here to support you through this transition and make it easier for you.

If you are saying as "update" about all of those changes announced in May (implemented to everyone until end of July)

Then I am afraid that this would be the new experience when using Trello so once you get it then it would not be possible to get old view back.
