1. Custom Fields is a paid feature, so it is possible that custom fields disappeared after the Premium Free Trial ended.
2. There are a number of quick capture methods in Trello, e.g., Slack, Microsoft Teams, Email, iOS, Android widgets, etc. All of those directly send the captured content to your Inbox by default (i.e. you don't have to select it every time) https://support.atlassian.com/trello/docs/trello-inbox/
