A former employee set up a company credit card for a Trello subscription with her company email address.
I would like to cancel or remove that payment method from that account.
How can I do that if I can no longer contact her?

I think (never needed to try it), if you are a workspace admin, you can go into billing and downgrade to free, even if it wasn't your account that put the card details in. This would stop further billing
