When I go to preview documents in the card, it comes up with an error message. I was able to do it before but now for some reason I can't. Other people in my organization are able to but 2 of us can not.

Are you using desktop app on Mac/Windows or accessing Trello through the browser? Is the problem happening in both places? (the main reason could be that you have an older version of the app)

All of us use Mac and are accessing in both places. The issue is only through the browser not the app.
