Hi @Sharon Eaton are you referring to done as they have a green check mark on them or as done that they are archived, or do you mean a checklist with a line through it?
For those cards with dates you have the option to check a tick box and the card will turn from yellow or red (if overdue) to green showing they are completed. In that case you can open the card and remove the check box and then you can change the due date by clicking on due date and modifying the date in calendar.
If you meant done meaning archived, you can unarchive a card by going to show menu on right side of board, clicking more, and then choosing archived items. You can then search for the cards that you indicate are not done, and unarchive them by selecting "send to board". The card will then appear in the list and board where it was last found before it was archived.
Third option, if it is a checklist that is marked done, you can un-select the check mark and the strike-through line will disappear.

Thank you. the status changed when I refreshed the board. Several times actually, when I change something within a board in Trello, it takes quite a while and several refreshes for the changes to appear in BigPicture.

I'm assuming you mean in Jira, you can do this either via the Edit tab or click on workflow.
