Hello, I would like to create a multi options checklist, or something similar, where I would have a topic and multiple answers to that topic. For example, topic: "Expected Time" and multiple answers to check "Today"; "Tomorrow"; "1 week".

You may be able to put something together for your use case using Amazing Fields . I know there are a lot of people doing similar things with it. You can customize the fields, layout, and styling for your workflow and maybe get something that matches up well.
As discussed, custom fields could work and I would recommend looking at the advanced capabilities of Amazing fields, which are also far more configurable and visually more appealing than Trello custom fields (Please Trello tell me you're working on Custom fields 2.0??? 🙏)
However for this instance, I think the simplest option is being overlooked. You can use Checklists in this way:
You can even use an automation to do the following.
When either Today, tomorrow or 1 week is checked, remove the other 2 options and check Expected time also...
You could use this to set the time too, "When Tomorrow is checked, set the due date to tomorrow"

Hello, thank you for the answer. I haven't explained myself correctly and I apologise for that. It's a little bit more complicated than that and the goal is different of what I described.
So, I aim to collect realtime data from observing individuals, therefore, 1 card will represent 1 individual, and inside that card I will have different options for different characteristics. Let's take an example for a scout watching a football match, where each card represents 1 player and inside that player you'll have something like:
- Heading: (option) Good | (option) Average | (option) Bad
- Pace: (option) Good | (option) Average | (option) Bad
And so on...
Hence the importance of making a checklist, because I can separate different topics, like "Mental"; "technical"; "Physical"...

Okay, based on that, and given that those attributes wouldn't be multi-select (I guess you can't be Good and Bad at the same time), you could use dropdown custom fields...

Sounds like you want Trello's Custom Fields feature. It allows you to create drop-down options. Alternatively, if the use-case you have is purely time/effort estimation, you might want to see if any of the Power-Ups available cover your use-case.

Would it be sufficient to collect possible values as three separate custom fields?
if you name these with “expectedTime”-prefix, and just supply the one label for the layouts, I think it could be solvable
However, the query capabilities of vanilla JIRA might not provide you with all your necessary search capabilities to then be able to utilise the values from your fields
