Would a password be sufficient for GDPR? I am using Trello as an Events Manager for a voluntary food festival. No one is employed. We are all volunteers.
Being GDPR compliant means (among other things) that you acting as a data controller (GDPR term) have a data processing agreement with Trello (acting as a data processor, again GDPR term).
This data processing agreement is the foundation of your relation with Trello in terms of GDPR. As @Torben_trellosaid, you should talk with your data protection officer about this. In general, using passwords alone does not imply you are GDPR compliant.

For GDPR it doesn't matter if you are a volunteer or not. It's about the personal data and how they are processed.
We'll not be able to provide legal advice in order for you to compliant with the upcoming GDPR. We'd recommend reaching out to your data protection office or legal counsel.
