Welcome to the Community!

If you have Trello Business Class, there is now a new dropdown when adding a new task to a checklist. At the moment, this is only available on BC, I have no idea if it'll come to everyone!

These allow you to assign a person, create a due date, mention someone (without assigning the task to them) and insert an emoji.

As @Ludo has suggested, if you don't have BC, you can automatically convert the item to a linked card and then you could automatically set a due date with another Butler rule.

Specially, the suggested converting rule in the article

when an item is added to checklist "Sub-tasks" by anyone, convert the item into a linked card

 It allows to create  a  linked sub task card in which you can add & manage due date
