An ex-employee who left on bad terms has now deleted one of our main boards, and I can't seem to restore it. There is no mention of it in the activity logs, despite another action of his being in there (removing another board which I was able to restore). There is years of data in here that is very valuable. Can someone please guide me on what I can do? It is impossible to reach out to anyone at Trello to explain the situation but it is a very urgent issue. So if anyone has any advice I'd greatly appreciate it!!!

As @Luciana Munhoz said, if they managed to Close then Delete the board, it is sadly gone. hopefully they only closed it and you can reopen it.

Sorry to hear about that! I can understand the frustration of a board being deleted. Unfortunately, it isn't possible to recover deleted boards. What we suggest is that you make sure that the board has not been closed: http://help.trello.com/article/781-reopening-a-closed-board
Closed boards can be re-opened.
If the board was indeed deleted, rather than closed, we have a few suggestions that might help you retrieve some of the lost information:
1. Check your email notifications: If you had notifications enabled that board, you might have received email updates containing the card's activities and comments. These emails could help you piece together some of the lost information.
2. Reach out to team members: If you were collaborating with other team members on that board, they might have some information saved on their devices or exported information. It's worth asking them to share any relevant notes or files they might have.
3. Review related cards and boards: Sometimes, information from one card on the deleted board might be mentioned in another board.
