I am a creative freelancer and I often have to estimate the cost of my working on a new project. I love the visual nature of Trello, and my eyes just blur when I see a spreadsheet, so I've been investigating ways to do quotes/estimates for the cost / time required for prospective new projects. It seems like this is something I can do in a sort of rudimentary way by giving each card a custom field with how many days the task on the card will take, then using Scaled or Number Stats to total up the number of cards, which I can then drop into my accounting software (Xero) to establish a quote. Does anyone else do this, and is there a better/more sophisticated way to go about it?

You seem to be on the right path. I would also tell you to check SumUp and Costello, as their functionality might be helpful for the workflow you are describing.
Pivot Table is also a new addition that I personally haven't tested yet, but it's also something you could try.
