Hello Trello Community!
Earlier today I started a Trello board for managing my email inbox, and started forwarding emails into it, using hashtags in the subject line to place the new cards in the right lists (i.e., "#Scheduling" should land in my Scheduling list). It worked a few times, and then it stopped working! Now they all land in the same list, regardless of how I tag it in the subject line.
What am I doing wrong?

Using a # in the subject line is reserved for labels. The email to board settings is what indicates which list the email creates a card in. So previously, you must have had a different list selected... See more details at https://help.trello.com/article/809-creating-cards-by-email
I see. So, is there no way then to forward an email into a specific list?

No, or at least not through Trello. You can use Zapier, and Zapier will give you a separate email address for each designated list. Get started at https://zapier.com/apps/email/integrations/trello. You'll want to use the 'Forward new emails to create Trello cards' zap.
