I need to add a custom dropdown column in the Jira Structure view. The new column, titled "Health Check," should allow users to select one of three options from a dropdown menu: "On Track," "At Medium Risk," or "At High Risk." Additionally, it would be helpful if I could use markdown or similar formatting options so that the values appear with specific colors—for example, "On Track" should be displayed in green font. This will enhance clarity and visibility for users when assessing the status of issues.

The Formula column doesn't support manual input like this. You can, for example, define a formula that assigns a specific color to a specific value, and reference a text field where users can manually add values to.
If your goal is to be able to manually set a value from a dropdown list with a certain color, you can look into the Test Run column. Although originally the column is designed for testing purposes, it can do exactly what you need - for each issue you can manually select a status from the dropdown list, and the status will be highlighted with a specific color. You would only need to define the list of values and their colors in the settings on the Manage apps page.
