I am wondering if there are any "risks" to setting up an integration between Jira and Bitbucket.
We are running Jira 8.1.1 and Bitbucket 5.16.0
My understanding is that it's easy as configuring an Application Link between Jira and Bitbucket.
My question is, once I set up that App Link, does it start doing things like caching information from the other platform? Are there any automated actions of the integration that start kicking in? (we would not have any Workflow Triggers set up)
Can I just as easily remove the App Link and it will be as if it was never there?
What about down the line after we've set up the integration and used it? What happens to each side when a Jira and Bitbucket integration is disconnected?

Just as you stated, application links are very easy to setup/configure and also very easy to remove. The application links between Jira and Bitbucket mainly assist in tracking code changes within Bitbucket to projects with Jira. If you choose to use an application link and then remove it, just know that any integration between the two will become broken.
There are multiple parts between applications links and some of this also depends on the products you wish to link together. Since the list of capabilities and practices may change, I would refer to the documentation at Application Links Documentation. The linked documentation will cover all of the basics you’re inquiring about along with additional information on security. Additionally, there is the Linking Bitbucket Server with Jira which covers what an application link will provide along with the steps to configure such a link.
