Hi,
I've recently been sending out blogs from my Confluence Knowledge Base but the emails that land in Outlook are extremely uninspiring and confusing because of how it is written and there is certain information such as 'edit blog' that I don't want.
Is there away to make blogs land in outlook that actually look like the blog or similar and has copy that is helpful and beneficial?

I'd say - hardly. I believe there's no way to configure these automatic emails that are sent from Confluence. I've tried checking open feature suggestions but haven't stumbled upon anything relevant.
These notifications are more to 'nudge' users to open and view content in Confluence than to display everything in the email notification. Without any custom solutions or Marketplace apps.
Additionally, you could maybe leverage Confluence automation (something like Send email action), but this is also relatively limited and I'm not sure you'll get what you're looking for.
Potentially, someone else here has constructed something like this, but I'd say it's a relatively advanced use case.
