We plan to start using JIRA service desk (cloud version) and we are very much interested to add Confluence spaces for knowledgebase.
The plan is to add different projects for different county as we are a federation and work in 45 countries. One of the countries is Italy and we would like to know if Italians can be used for the their confluence space and not the English language.

Italian is available as one of the available languages in Cloud.
You can set the language for the entire site, or individual users. See below on how to do that:
I want to clarify something since you asked if spaces can be set to Italian. If you are asking if individual spaces can be set to different languages, then the answer is no. You have to set all of Confluence for global users or individual users. If you want a space to be in Italian then the pages can be written in Italian, but the buttons and menus will be whatever language you set the global instance to.
