I just found out that there isn't a way to turn off email notifications in Confluence cloud when you watch spaces/pages. As a workaround, I will now be advising my colleagues to set up an email filter that moves all of these unwanted notifications into an archive folder in email (or deletes the messages).
I'm wondering if there is another way to get at what we are trying to accomplish. I'd like to figure out a way for employees to see the most recent activity in a particular space or all activity in Confluence. Is there a way to see all activity in Confluence outside of installing the mobile app and clicking on Activity (I think this shows all activity??).
If I watch a space, I can see the latest activity in that space by clicking on the bell icon and scanning my watch list. But if I am not watching a space, how do I see all the latest activity in that space? And how do I bring in an activity stream to a page so that I could just show what the latest new pages, new blogs, edits, etc. are in that space?
I am new to Confluence and trying to sort this out so I can advise employees about their options for staying informed while cutting down on the noise.

I just found the activity stream macro that I can add to to landing pages but it is bringing in Jira content which is not what I'm looking for. Maybe there is a way to set it up so it brings in Confluence activity from particular space or all spaces.
