I am trying to show the the Resolution/SLA escalation field on my jira issue/filter macro in confluence and it doesn't pull in that information from Jira. Just trying to figure out if this type of filed just doesn't work within confluence or am I doing something wrong?

You are not doing anything wrong. It is a known issue: JIRA issue macro does not display certain columns data(work ratio, progress field, time to resolution and time to first response)

Regrettably, I don't have a workaround. However, you may communicate your use case directly to the development team on the linked ticket.
