Is there an option I can choose such that when a page I'm watching is edited, the e-mail shows a preview of what was edited?

I'd like so that when an e-mail goes out to all page watchers, it includes a preview of the section of the page that was edited. Is this possible?

Alice I recommend that you make that a feature request to have that as the default behavior. I would vote for the feature, as I believe that should be the default behavior.
