I have verified my project exists but when trying to creat an issue or an epic my project does not appear in the drop down.

Check the permissions in Jira for the project.  You need to have "create issue" for it to appear in the list (remember that admin rights mean admin, not do-everything)

How do I check permission for the project?  Apologies.  I'm new to Jira/Confluence and racing down struggle street :)

Hello Alicia,

If you're project admin, you can check permissions in the Project settings (cog button) > Permissions tab. The direct URL is: https://yoursitename.atlassian.net/plugins/servlet/project-config/yourprojectkey/permissions (just replace with your site name and project key).

Here is the related documentation: Managing project permissions, hope this helps!
