When adding a checkbox, is there any way to disable the tip text that is automatically inserted? For example, you add a checkbox and text next to it says "Type your task here, using "@" to assign to a user and "//" to select a due date".
This is annoying enough to me that I am posting it here, I just want to add a checkbox, and sometimes I don't want any text next to it so then I have to delete that text. Sometimes I like to add a column to a table that is nothing but checkboxes and in the next column type the project or task or whatever.
I am not aware of any way to disable it.

I think the tip text is there to remind the user to create a 'proper' or 'complete' task.
The thought there may be that you don't want random tasks that need to get done with no one being responsible for it, or no due date for it to be completed. They could potentially hang out there in eternity and never get done - no one would know they exist.
If you are new to Confluence: The Task Report macro will not work if you create tasks as you stated above (adding a checkbox in a table). If you aren't familiar with this macro, I would encourage you to check it out. It's a great way to have an overview of tasks in your space.
Interesting idea about creating a checkbox in a table, though! I just tried that, and when clicking the task list icon (with the cursor in the cell of the table), it added only the checkbox - without the tip text. I could see where that might be of use...
