Why some of the tickets show as Done but still unresolved?

In your workflow, the transition to the status "Cancelled" might not have a post-function to set the resolution.
When configuring your teams' workflows it is recommend to make sure that the Resolution field is set whenever work transitions to done or cancelled, so the tickets are shown as resolved.
In this Atlassian documentation [LINK HERE] you can learn more about best practices and how to configure your worklfow to automatically set resolutions, so they are not shown as unresolved.

When I tried to add a post function, I don't see the option to add "The resolution of the issue will be set to Done."

@Super Diego , you should add the post function. Let me show step by step how to add the new post function:
1. Click on "Add post function"
2. On the next screen, choose the option "Update issue field"
3. After that, choose the "Resolution" field and choose the resolution you want to set
4. Add the post function and publish the workflow draft.

I still cannot change the Resolution status from unresolved to Done.

@Super Diego , for that, there is another step.
First, you fixed your workflow so the next issues will have de resolution set. But now, if you want to change the issues that were created before the changes and are still showing as resolved you have different ways. In this community post people shared different ways to do that - via automation, via bulk edit e even via workflow by transitioning issue from one status and then back to done after the post function was added [LINK DO THE POST].

One more question: For each transition, do I need to add a post function from Resolution to Done, to set the resolution to "Done" automatically

It is recommended to set the resolution in the transitions to the last status of your workflow.
