I'm using cascading fields as part of my projects' custom fields, while recently we've start using Discovery add-on as well.
AFAIU, it seems that cascading fields are not supported by Discovery at all... Is this correct or there's a way to use this type of field with Discovery as well?
You are correct that Jira Product Discovery (JPD) currently does not support cascading select fields, a feature available in standard Jira projects.
To overcome this limitation, you may consider exploring third-party apps on the Jira Cloud marketplace, which can provide enhanced custom field functionalities that simulate cascading behavior.

If so, is there any other way to create a conditioning between 2x different fields, without using cascading fields? (means, once a value is selected in the first field from a pre-defined list, the list of options in the follow-up field will be adjusted in accordance...)
We do need JPD to our use cases, so I'm looking for an alternative field that might meet our requirements.
