is it possible to create the author or the request participants from forwarded email?
The idea is to forwarded the email from one account to mail account which jira server desk creates the issues. If i send this to the account, I'm the author and not the person who send the mail.

You maybe able to use a third party plugin like automation for JIRA or Scriptrunner. There would have to be very specific requirements to make this work. The better solution would be to change individuals behavior and educate them on how and where to submit an issue. When we changed to service desk we had to let users know that we would no longer be accepting tickets via personal email and directed them to the portal.
