It's actually comment you need, not "edit". Try
jira.permission.comment=denied
instead

Hola! Para hacer esto puedes ir al Workflow, editarlo, y ve a la seccion de Propiedades, ahi agrega la propiedad jira.issue.editable con valor false en el estatus en el que ya no quieres que se puedan editar los problemas y listo!
