Requirement is currently I have only two fields when I am trying to create a customer I.e email id and display name. Two questions I have
1. Can I add few more fields as custom field while adding a customer. Basically can we customize a add customer screen if yes then what is the process
2. Suppose I have added one field as phone number with email id and display name and created a customer so now suppose tomorrow I want to create an issue. Now what I want is when I have created an issue I want my phone number to be automatically displayed in Labels tag.

When creating customers, currently, it's not possible to add any other information about them.

Regarding your second question, I'm afraid that it will not be possible to map custom fields with their information when creating a ticket. If you use CRM, you can connect it with Jira using an add-on and then, it will show customer's information on tickets:
