All incidents between 5pm and 9am the next day are paused, where I can configure that.
Hello,
I guess, you are talking about SLA. If so, you should create a calendar for your SLA and define correctly working hours. You can find more info about calendars here:
https://confluence.atlassian.com/servicedeskcloud/setting-up-slas-732528967.html
@Napoleón Bonilla, your question's title seems unrelated to the body which is causing confusion.
Configuring Issuetypes for all project is one question
Pausing the SLA timer during off-hours is handled by your calendar as Alexey conveys.
Your reply to Yogesh seems to be a statement of what you are doing vs. what you want to do. If it is what you want to accomplish then again configure your SLA calendar.

Thank you, every day from 5:30 pm the incidents registered in jira service desk are automatically paused and the next day from 9 am everything goes back to normal, the question is if in jira you set the schedule of jira service desk service something like programming 24/7
