I've a user created but I'm trying to remember the pass and don't receive the mail.
Is a user with rol (Service Desk Customer). I don't found where can I change the pass.

Did you try this...
click on the Cog (Jira settings) and select user management. Search for the user click to show details. Click ellipses and select prompt to reset password.
Is a Client inside a Project, not a user for administration.
I deleted the user and try to invite again and create a new account but we never receive the mail

If you are speaking about Customers you will find them here - under User Management then Jira Service Desk. Search user and click on ellipses to the right and select change password.
