I am creating support tickets within Jira Service desk. As we find reproducible bugs, we are escalating those support tickets by marking their status as Escalated. Then we create a corresponding Engineering ticket linked to the support ticket. I need to show a report of all support tickets, that have created engineering tickets where those engineering tickets are not yet assigned to a development team.

You should be able to create a filter using JQL and save that filter. (https://support.atlassian.com/jira-core-cloud/docs/save-your-search-as-a-filter/) You can then use that filter on a dashboard to display your results.
