Due to spam (and I mean malicious and Phishing, not out-of-office) and automated internal emails we want to manually screen incoming emails before letting service desk process them and create accounts. I'd like a human to put those emails into a "to process" folder and work off that instead of blindly reading all incoming email.
Options on a project appear quite limited.

It appears there is no way in the email handler to do this. I've approached this the other way around now. Created a folder in the mailbox and a rule or two to move most emails there immediately on arrival. Only emails I want to process are moved back to the Inbox folder after a person has inspected them.
Thats done in the incoming mail-server configuration.Edit the incoming mail server, and it's the last field on the first screen: "Folder name".

No, that configuration you refer to is for JIRA Core. Service Desk's mail handler is separate. It seems to be only configured for each SD project and had very limited settings compared to the traditional JIRA options.
