ITSM Approvers

I'm new to Jira and am currently working on setting up our change management workflow. I see we have an approver and CAB field available but I am struggling to understand how to update the list of approvers to a list of people. I think we are still using IT Service Desk  on cloud rather than the newer IT Service Management at the moment.
