Is it possible to create a request type that is not visible to customers?

same like the default Request type which is the Email request.

Yes. You can hide RTs from the portal or rather not expose them on the portal. Just ensure that the RT does not exist in any portal group. Project settings > portal settings > portal groups.

I dont think its possible as there is an open Jira Ticket
