Could you please tell me where I can located documentation on the original color scheme for the Jira Service Desk Portal?

Good evening @Brittany Woerner 

You have to be a JIRA Admin to do the following:

Go to the JSD Project -> Project Settings -> Portal Setting (Colors are the bottom of the frame)
