We created a service Project, and via a request type we want to link directly to an external link instead of the request. 

Does someone know if this is possible?

If I understand you correctly instead of getting a request form to fill in you want to send the user to another site?

Maybe not exactly what you're looking for but you can insert hyperlinks in different fields on the portal:

• As an announcement on the portal
• In the request type description 
• Portal settings > introduction text 

Next level is to explore the addon Refined for Jira in which you can build up really customised portals with additional features on top of what standard Jira currently allow.
