We will use Jira Service Management as a support tool in our company, so for now I am a user and 2 colleagues. I gave everyone admin rights. What would happen if I went to another company, for example?
Does it matter that I created all this and added colleagues later and gave them admin rights later?
Is it possible for the tool to be company-related? To be an Organization where the owner is our company and the three of us are admins for now (we will add more colleagues later)

It doesn't matter when you give someone the admin rights, it does matter what admin rights :)
The highest level you can have is Organization admin and if you are the only one of that and you leave then they might need to reach out to Atlassian to change that (unless you first transfer it or give it to someone else).
Other than that it's not that much bound to something specific, you'll have a billing contact which would be company specific and also the domain name of course might be linked back to the company.
So I feel like the main thing would to make sure the billing information is up to date so your technical contact part on my.atlassian.com is set up properly for the company contact. (could maybe even be a generic account not linked to a real person so it doesn't impact when someone leaves or joins)
But all in all not too much risk. Like I mentioned be sure to check out the billing section of your instance (if you are not on Free) and maybe see that you have more than one Organization admin.
