If so how do you setup a token specifically for Insight?

If you are using JSM Premium and Insight, then the Rest API is not available yet. We will introduce the feature in the future.
PS: Until then, you can review the "Incoming webhook" trigger of the Automation feature if you need to send data to Insight. We introduced new automation conditions and actions for Insight (edit object, lookup objects, edit insight field attributes) which may help if you want to create an object.

Both Premium and Enterprise subscriptions will have the Rest API at the same time.
