Is it by any chance possible to create a series showing number of issues per organization?
I am familiar of making such report by myself, but the issue is that we have large number of customers and the count is increasing, which means I would manually need to add each company to a such report as far as I know.
So is it possible automatically table, or series or anything which includes all the cases per organization?
There is an open request for adding Organization as a issue statistic - JSDCLOUD-6383 you might wish to vote for it.
Of course you could create a filter per org but that is really messy IMO and doesn't achieve the desired goal, e.g. a pie chart showing #s per org.

As @Jack Brickey has said, I'm not sure there's a way to achieve this easily out-of-the-box with Jira but this is a use case we came across when developing Custom Charts for Jira.
By selecting a Chart By option of "Organizations" the dashboard gadget will automatically create charts & tables showing the number of issues for each organization. You can even have two-dimensional tables showing issues open and resolved per organization.
