I want to start receiving my tickets by email. however, when I am setting up my project email, it only shows me demo@xxxx.atlassian.net in my registers.
And, Google -Microsoft and the other buttons below don't work and don't let you set up a new record

I have simulated here. You need to be system administrator to be able to configure emails.
If you are only project admin, so that is why you are unable to click on the buttos.
