Can I use Default Cloud Mail Server with multiple projects?

If I have project A B and C, then when a customer email to jira@company.atlassian.net to create a new issue, which project will the issue be created in?

Every JSM project comes with a unique email or you can create one of your own. You cannot use a single email for more that one project.
