I want to add the field request participants in the hiden section of a form in jira service desk but the field is not listed.
I wanted to use it to notify the peolple set in this field about the new ticket, The person who created the project, has only added the field approves but there are some of the approver that are not and they need to be watchers...
Can i do this?? can you explain me how?

The Request participants field is currently only available to be editable after a ticket is created. This field can't be added on the create issue screen, so it will not be possible to add it on the form in order to add a default value.
There is a feature request suggesting the implementation of such ability:

Also, I would like to clarify that Participants are different from Watchers.
Participants receive customer notifications and it's better to use it only with customers to prevent issues regarding permissions.
Watchers receive system notifications, it's a field for internal licensed users.

Is there any way that I can set watchers?? because all the people who wants to be notified automatically are internal users.
I need to add three watchers in a particular workflow.

The Watchers can be only edited manually, it's not possible to add a post function on the workflow or create an automation that edits the field.
There are two options that may help you:
1 - An automation that mentions them on a ticket (internal comment), so they will receive a notification.
Go to Project settings > Automation > Add rule. Then, create a rule based on what you need, for example, if a customer creates a ticket related to a bug, it will mention specific people.
Then, when viewing the ticket, they can click to watch it.
2 - Edit the notification scheme so they will receive a notification for all tickets that are created in the project. Go to Project settings > Notifications (Classic project). Then you can edit the scheme and add "Single user" to select specific users. Note that, some schemes are shared between projects, so they may receive notifications from other projects where they have permission.
If it's a next-gen project, go to Project settings > Notifications > Internal notifications. It's not possible to set "Single user", but you can select a project role that contains the users.
