Hey there,
When using next-gen projects in Jira Service Desk there´s a limit of 50 fields that can be added to the project across all request types. That´s very few.
Is there a way to unlock more fields, maybe with a plugin or something?
Otherwise, if I am correct this limit doesn´t exist for "old" projects. If it´s not possible how can I convert the next-gen projects back to old ones?

When using Jira Service Desk next-gen projects, the limit of fields in a project is 50 and it's not possible to increase it.
With that said, if you need more fields it will be necessary to use Classic projects. To migrate from a next-gen to classic, please follow the steps of the documentation below:

It depends on each feature and each case. There are features with many votes that were not implemented and some with few votes that were, so we can't tell exactly how many votes this feature needs.

@Pi K and @Angélica Luz we built the ProForma app to allow teams to build forms in JSD (or Software) without having to rely on custom fields. With ProForma forms you can have as many questions as you want, along with conditional logic (dynamic forms) and many validation options. All of the data is still stored in Jira (in entity properties), which is good from a security/data-manage perspective. There is also a free version ProForma Lite.
In collaboration with @Rachel Wright, author of the Jira Strategy Admin Workbook, we wrote an ebook on this topic "Battling Jira Custom Field Bloat".
