In this doc from Atlassian from 2017 it says custom webhook body is available in JSD 4.1

From Jira Service Desk Server 4.1, you can send a custom payload in your automation webhook.
However, checking the JSD download page, version 4.0.2 was only released a month ago.

So, where is this mythical version 4.1 (which I need, for custom payload!!) Or are Atlassian documenting features 2 years before they are released??

The link that you provided clearly says that Jira Service Desk Webhooks feature is available in Jira Cloud and Server (3.2 or later) as below:

You're missing the entire point of my question. "custom payload" webhooks. Not just webhooks.
The bit that is described in the linked page. With the requirement on v4.1, the version I was asking about.
To be clear, I have webhooks in my 3.14.1 of JSD. But not custom payload.
I'd rather not upgrade to 4.0.2 right now, unless it gives me custom payload.
If someone says "custom payload is in 4.0, that is just a typo" then I can upgrade.

Screenshot of the page I linked to that you didn't look at, mentioning service desk server 4.1 having custom payload. At the top of the page well above this extract you can see it was updated in Dec 2017, when 3.9.2 was the latest available release... Even 4.0 wasn't released till this year, over a year after the article was last updated. Hence my confusion :

You are correct. Probably, the intention of the documentation is that you can send a custom payload from JSD Server 4.1 which is not released, they should have added that part explicitly.
On a positive note, the documentation lists that there is a known issue on custom payload https://jira.atlassian.com/browse/JSDSERVER-6292 whose status says 'Waiting for Release' implying that this is part of a future release.
