Can you provide us what exact e-mails you would like to change its subject? Are you referring to issue update notifications?
Today, you can use the inbuilt Jira Automation to send customized e-mails upon issue actions, which you can add customized subjects:
Additionally, there are a few apps that give more options to customize your e-mail notifications with customized e-mail handlers, like Enterprise Mail Handler for Jira (JEMH).
Please take a look at the Atlassian marketplace to see more options and let us know what kind of e-mails you would like to change its subject if you need more instructions.
