I am interested in customizing my Service Desk notification templates by providing the name of the Assignee to the Requester. I've tried several combinations similar to ${issue.assignee} but none seem to work.
We use Service Desk internally at a large firm and by shielding the Assignee from the customer notifications, it results in an extra communication step to alert the reporter who will be working on their issue.

Jira Service Desk does not allow the assignee name to be shown to the customer on portal neither there is any template option to provide Assignee name via email notification through default configurations. You might have to try using additional Addon/plugin on marketplace to achieve this.
There is also a ticket in Atlassian raised based on a similar request
